Biography

Ernesto Cacialli Bio1Ernesto Cacialli born in the belly of Naples on 11.2.1949 where he lived in Vico of Maiorani, 13.

At the age of 6 years he began his experiences with the “white art” with the “newsboy” mansion near the stand of the pizzeria “La Marca Brothers” in Forcella on whose marble It was propped a pizza cooked: he wrapped the pizza “at wallet”, delivering it into the hands of the customer. With the passing of years, pizzeria changed management and is entrusted to Vittorio Pecoraro that uses the small Ernesto, by now 12/13 years, as a baker’s apprentice. In 1964, at age 15 he is engaged by the Pecoraro near kneader and formed his first dough balls for pizza. The following year he was promoted pizza maker at the pizzeria “Nazionale”.

At 17, he works with the pizzeria “dei tre santi” in the district Sanità.

From 18 years up to 1979, to 30 years, was boss pizza maker in to pizzeria “Di Matteo ai Tribunali”.

From 1980 to around 2001, for twenty years he was a partner with the job of manager of the whole company, for both the pizza department for the fryer. He cared for the second decade (1990/2001) also the purchases and public relations.

In 1994, at th G7 in Naples, during his stay in the city, he received the visit of the US President of America Bill Clinton, with the retinue of his staff of about 70 people, ate the pizza prepared by Ernesto Cacialli. It was then that Ernesto became “Pizzaiolo of the President.”

After some years, from June 2001, he undertook a business independently opening a pizzeria of her own in the historic Via dei Tribunali, exercised with 25 workers, churning out about a thousand pizzas a day from 09.00 am until 24.00.

During his lifetime, the fifty years of experience, has made several trips in Italy and abroad, bringing the true pizza on the palates of the world. Seoul, New York, Tokyo, New Jersey, Barcelona, Paris, Brussels, Scotland, Cork, Las Vegas and even Rome, Brindisi, Bologna are the different cities where Ernesto Cacialli has had the chance to prove his talent in the art of pizza .

He taught in professional training courses for the region Campania and has completed several internships in dozens of Japanese citizens as well as to university students enrolled in food science.

It was the official pizza maker of “Mediterranean extravagance”, world meeting of 20 top chefs who met in Nerano (Na) and Barcelona.

He was President of the Association Regina Margherita, it is the holder in the world record for having built the largest wood oven in the world in which it was cooked a “Margherita Pizza” with a diameter of 5.19 meters.

He realized, as the President of the Association Queen Margherita, four reviews of the “Trofeo Città di Napoli” international championship for pizza-makers in Naples.

In March 2008 he conducted a seminar to teach some techniques to the true Neapolitan pizza making, in Las Vegas, where he was awarded, by the World Pizza Team, the nomination of “pizza legend.”

At the young age of 60 years, when he was in the prime of his great experience and professionalism, when wisdom led him to always and everywhere to express, with its Neapolitan mimicry, the best that life had offered him, God willed to call him if in heaven.
